Poppy Seed Chicken

2-3 cups cooked rice
2-3 cups chicken breasts, cooked and cubed
1 cup sour cream
1 can Cream of Chicken soup
1 cup crushed Ritz crackers
1/4 cup melted butter
1 Tablespoon poppy seeds

Preheat oven to 350 degrees. Boil raw chicken breasts with salt and pepper until done. Let chicken cool slightly and cut into one inch cubes. Layer cooked rice on the bottom of 9x9 casserole dish, then cover with chicken.

Stir together the condensed soup and sour cream. Pour over the chicken and rice. Top with crushed crackers and poppy seeds. Then pour the melted butter on top of the crackers. Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly.
